Now, I have two theories as to what these might be, and no one here to tell me I’m wrong, (except Nick) … creative interpretation awaaaay!~*~*~*~Nick and Karu’s Spring Strawberry Salad
Ingredients:1 cup of strawberries (no leafy parts, please) fresh or frozen.2 tbs good quality oil; (olive oil will do)1 tbs of real maple syrup (honey will do if you can’t get real maple)A pinch of saltAbout 3-6 grinds of black pepper2 tbs apple cider vinegar (or sherry vinegar; or rice wine vinegar in a pinch)Goat cheese crumbles (to taste, we didn’t use a lot, it’s strong stuff!)A handful of pecan pieces (or walnuts)A handful of fresh pomegranate arils (seeds)Assorted, dark leafy greens (Aside from Dandelion, you could also use turnip greens, collard greens, mustard greens, kale, even baby spinach if you like!)Step 1 – Please make sure your strawberries are completely thawed if frozen-no one’s making strawberry vinegar pops! (Though if you do make them, let me know how it goes.) Make the viniagrette by putting the first six ingredients in a food processor or blender. The oil, fruit, syrup, seasonings, and vinegar will need to blend together until very smooth.

Step 2 – Gather your leafy greens in a salad bowl, pour the desired amount of strawberry viniagrette over it and toss together so that it all gets at least a little of that sweet acidic flavor. After that, sprinkle on your goat cheese, nuts, pomegranate arils, and feel free to add another grind or two of pepper before digging in.Tips and add-ons: This is a salad, folks. It’s only as complicated as you make it, and if we’re going to talk variations… honey, you can do anything you want with it, I’m not here to judge you. You want almonds instead of pecans? Throw on some almonds. You want them sliced and toasted? Great idea. Allergic to strawberries? You can make vinaigrettes out of lots of fruits! Orange, lemon, pineapple, blackberry-all of which, and more, are delicious.Not a fan of pomegranates or find them too much of a hassle? Sure, no problem! You could throw in raspberries, blueberries, salmon berries (<- the thing Nick believes the original dots are, and he’s probably right,) or even section some blood oranges and toss those in there. Would you prefer feta or blue cheese to goat cheese? Go for it! Do you object to milk cheeses? Try vegan cheese! Do you hate all cheese equally? No cheese!~*~*~*~This salad is a simple enough dish, but all of the components together have a good, complex taste that would be a fine accompaniment to a holiday dinner or to be served at a dinner party with friends, but seeing as we’re not doing big gatherings right now, Nick and I enjoyed having this leafy treat to ourselves.
